Winter Spiced Quinoa Porridge

 

This recipe will not only warm your soul and leave a warm spiced aroma in your kitchen for hours but it will provide essential nutrients to fuel your body and feed your soul. The combination of cinnamon, cardamom, ginger and orange provides a multitude of benefits including lowering levels of oxidative stress, inflammation, and blood sugar. It also supports digestion and is packed with essential fatty acids to help with memory and cognitive function.

  • 1 Small Sauce Pan

Ingredients
  

  • 1 cup dry quinoa
  • 1 cup water
  • 1 cup plant-based milk
  • 1/2 tsp cinnamon
  • 1/4 tsp cardamom
  • 1/2 tsp grated ginger
  • 2 pitted dates chopped
  • 3 clementines
  • 1/4 cup chopped raw walnuts
  • 1/8 cup raw pumpkin seeds

Instructions
 

  • Add the dry quinoa, milk and water to the sauce pan and bring to a boil on medium-high, then turn the stove top down to simmer for 10-15 minutes stirring occasionally.
  • While simmering add the cinnamon, cardamom, ginger and dates and stir.
  • once the quinoa has absorbed all the liquid, transfer the mixture bowls and top with sliced clementines, walnuts and pumpkin seeds and a bit of milk and serve warm.
