- 1 Small Sauce Pan
Ingredients
- 1 cup dry quinoa
- 1 cup water
- 1 cup plant-based milk
- 1/2 tsp cinnamon
- 1/4 tsp cardamom
- 1/2 tsp grated ginger
- 2 pitted dates chopped
- 3 clementines
- 1/4 cup chopped raw walnuts
- 1/8 cup raw pumpkin seeds
Instructions
- Add the dry quinoa, milk and water to the sauce pan and bring to a boil on medium-high, then turn the stove top down to simmer for 10-15 minutes stirring occasionally.
- While simmering add the cinnamon, cardamom, ginger and dates and stir.
- once the quinoa has absorbed all the liquid, transfer the mixture bowls and top with sliced clementines, walnuts and pumpkin seeds and a bit of milk and serve warm.
